Strong Hands Zucchini Fritters

This recipe was born out of a glorious Asian supermarket called "Sam CoCos" where you can only buy zucchinis by the bucketload (like literally, a bucket full). We often cooked with zucchini but couldn't figure out how to use them all up and so zucchini fritters were determined. The original googled recipe made an obscene number of references to having someone with "strong hands" to be able to squeeze enough water out of the zuchs - and so we ask, are you up for the challenge?? This recipe featured in the Green Day of Talia's week of "colourful cooking" (attempt to prepare dinner using only one colour) as evidenced in the photo provided. Green cordial and roasted brussel sprouts are good, but it probably works best as a side, with some contrast - baked sweet potato and a source of protein works well!

  1. Fritters:
  2. Put the grated zucchinis in a large bowl and add salt.
  3. Sit for 15 minutes (you, and the zucchinis) while osmosis does its work and the zucchinis lose some water.
  4. Use any manner you see fit to drain the zucchini - a sieve can work or hold fistfuls in your strong hands and squeeze it out, paper towel is a nice pat at the end.
  5. Add all the other stuff and stir (make this more nuanced as you please).
  6. Pour mixture out like pancakes (or more likely dollop it with a big spoon) into a large frying pan or onto a BBQ (best way to make heaps at a time) with a little oil and cook until golden brown on the outside.

  8. Mix the lemon, yogurt and remaining herbs together.
  9. Disclaimers:
  10. This recipe is vego and can be vegan (use dairy free yogurt), but I also recommend adding an egg or 2 if you are struggling with the mixture consistency. Other alternatives include using green onions (I quite like that) and adding parmesan. I think I forgot garlic in the ingredients but obviously always include garlic...
  11. Just keep adjusting quantities until you vibe with the viscosity!
  12. I've only ever made this with like 17 zucchinis, so I have attempted to attempt to a normal amount...
