Red Beans and Rice

We usually make this after having a holiday ham. A ham bone is a great starter

Ingredients

Instructions

  1. Soak red beans overnight. Drain.
  2. Prepare a roux by melting butter and then adding flour.
  3. Stir constantly until roux bubbles and turns the color of milk chocolate
  4. Dice onions and garlic and add to the roux. cook until caramelized.
  5. Add sausage. Cook until caramelized.
  6. Add honey, Cook until honey is caramelized.
  7. Add ham. Integrate with the sausage.
  8. Add beans and water.
  9. Add garlic powder, onion powder, salt, pepper, and bay leaf.
  10. Stir thoroughly.
  11. If using a pressure cooker, cook for 1 hour.
  12. If using a slow cooker, cook for four hours or so.
  13. Cook rice.
  14. Serve with Jiffy corn bread.
  15. Note that measurements of seasonings are approximate. Season to taste.
