Quesadillas

Ingredients

Instructions

  1. Sautee chicken breasts in olive oil until cooked through(or use rotisserie chicken).
  2. Add black beans, frozen corn, and salsa
  3. Using a griddle, heat tortillas.
  4. Add a layer of cheese.
  5. Spread a thin layer of chicken and vegetable mixture.
  6. Add cheese. Cover with a heated tortilla.
  7. Sprinkle cheese on griddle. Move quesadilla over the cheese to melt it onto outer shell.
  8. Cut into 8 pieces.
  9. Omit chicken for vegetarian option.
