Quesadillas

Ingredients
- 2 chicken breasts
- 1 15 ounce black beans (can)
- 2 cup(s) of frozen corn
- 2 cup(s) of Chihuahua if available or Monteray Jack cheese
- 0.5 cup(s) of salsa
Instructions
- Sautee chicken breasts in olive oil until cooked through(or use rotisserie chicken).
- Add black beans, frozen corn, and salsa
- Using a griddle, heat tortillas.
- Add a layer of cheese.
- Spread a thin layer of chicken and vegetable mixture.
- Add cheese. Cover with a heated tortilla.
- Sprinkle cheese on griddle. Move quesadilla over the cheese to melt it onto outer shell.
- Cut into 8 pieces.
- Omit chicken for vegetarian option.
