Chicken Pasta with Peas

Ingredients
- 3 chicken breasts
- 1 pound(s) of frozen (baby select if available) peas
- 0.25 cup(s) of olive oil
- 2 tablespoon(s) of red wine vinegar
- 1 juiced lemon
- 1 tablespoon(s) of Italian seasoning
- 1 teaspoon(s) of kosher salt
- 0.5 teaspoon(s) of black pepper
- 1 yellow sweet onion
- 1 pound(s) of rotini noodles
- 0.5 tablespoon(s) of yellow mustard
Instructions
- Boil rotini noodles.
- Cut chicken into cubes.
- Dice onion.
- Sautee half of the diced onion in 1 tablespoon of olive oil.
- Sautee chicken breasts (add olive oil if needed).
- Drain boiled rotini noodles.
- Add peas, noodles, and chicken into bowl.
- Combine dressing ingredients (olive oil, red wine vinegar, lemon, Italian seasoning, mustard, salt, and pepper). Pour over chicken, pasta, and peas.
- Mix well.
